Bay of Fundy for sure. Fundy National Park is worth a day or two, Hopewell Rocks, and don't miss Cape Enrage (my favorite, near Alma).
Stellar beaches on the east shore my favorite is Aboiteau Beach in Cap Pele (south of Moncton), and Kouchibouguac up north of Moncton. Aboiteau beach has some nice cabins on the beach.
