According to my knowledge, 2x12 cabinets are popular with rock guitarists today, however the lightest 2x12 cabinet I can find that's still available in stores is 48lb, and anything above 41lb is a struggle for me. Also, my sound requires a Celestion speaker (unless it's the BOSS Katana speaker, but the cabinet with that is 48lb). Does anyone know of a 2x12 cabinet with Celestion speakers at 41lb or lighter?

Two 1x12s.

Or get a 2x12 built by a reputable builder who knows what you want, and put neo speakers in it, and handles like the Mesa cabs.

Open or closed back with Neo Creambacks would probably do it. Pine with Greenbacks. The Seventy/80's are under 7 lbs each - I'd recommend those but only in a closed back.

I personally wouldnt recommend seventy80s. They are not a great speaker IMO.
They actually work very well in a closed back 2x12. Currently I'm using G12T75s but I wouldn't bat an eye if I had to put the Seventy/80's back in. Each to his own.

..What amp do you have? What type of music/tone are you aiming for, and why 2x12? I have a Mesa 3/4 open wide cab with a C90 in that sounds amazing with my BC50 head

The Vox Night Train 212NT cab is close to your weight limit......42.9 lbs. It's pretty small for a 2x12, at 27.5" x 10" x 20". Celestion G12 70th Anniversary models, 60 watts, semi-open back but can be converted to closed fairly easily. I use one with a Quilter 101 and it's impressive.
