Would two 8ohm speakers wired in series be 16 ohms or 4?

Two 8 ohm speakers wired in series would be 16 ohms.Wired parallel they are 4 ohms.

Excellent, thank you.

I got an old 2x12 cab from a neighbour who doesn't play anymore so I'm trying to get to know it a bit.

Yep, in series you add them up and in parallel you divide by the number of speakers used, assuming they are the same rating.

The formula for parallel is:

R (total) = (R1 * R2)/(R1 + R2) just in case you have to work out two speakers with different impendances.

Remember if they are different impedances the lower impedance hogs the power, big time!

Thanks for all of the info guys. I haven't decided what I want to do with this little cab yet. It doesn't sound bad, but it's nothing special. I don't really have any use for it, but it's probably not worth enough to bother selling either. I guess it'll sit around until I need it for something.
